We were touched by the story of the owner, Mark Baker, who, until 5 years ago, was the "King of the Nightclubs" in New York for 30 years. At one point, he realized that his self-destructive sex, drugs and rock & roll life had to stop.
Mark shared, “I’ve got sober from bad habits. But hey, I was in the party business a long time so i was really ready for the next healthy chapter in life."
After a couple of months of sitting at home eating ice cream and burgers, he decided to start a healthier lifestyle. But for Mark, the healthy vegan movement was way too serious so he started experimenting in cold press juices and gave them funny names like ‘Sexy Banana’.
He moved to Bali and started the nightclub Townhouse, which also included a juice bar. However, after a while he had the same nightclub stress as in NYC, which promted him to sell the club and start In the RAW Café in summer 2016.
Because he wants to use only organic ingredients, he began to show local farmers how to grow organic produce. Now, In the RAW has its own organic farm in Keramas. In the near future, he will open more ITR café’s in Bali. We love their recycling system that uses glass bottles, banana leaf take away boxes and juice containers made out of passion fruit skins.
In the RAW offers 25 different types of juices and uses the Cold Pressing technique. This method slowly squeezese the produce to extract the juice while keeping the nutrients and enzymes intact. Because the body functions and cleanses better in an alkaline state, they use only raw ingredients.
We tried the 3 day juice cleanse and experienced the rainbow of vibrant colors that Mother Nature provides! Our favorites were: ‘Crème de Coco’ with dates - thick, filling and perfect if you are craving something sweet. The orange ‘Pucker up’ with grapefruit, tangerine, orange and coconut, which was really fresh & tasty! ‘Nightvision’ that is bloody red and ginger spicy. ‘Jamu Dream’ tastes really strong and bitter, but is also a herbal medicine against a hangover or tiredness. ‘Tropical Garden’ has a "salad in a bottle" taste from the celery and coriander -not our favorite although you really taste the healthiness.
On the first day of our Juice Cleanse we struggled from the lack of energy and also missed the social aspect of meals and how they normally break up the day. Mark advised us to drink lots of tea and spoiled us with raw cacao ice-cream. Yummy! On the second day our energy level was way better, but the craving for something crunchy was teasing us. But, by the third day we could really feel how the juice started to clear up and increase our energy levels- both physically and mentally. Also, the desire for unhealthy food disapeared. Overall, we really became aware of our eating habits and loved our new flat tummy!
In the RAW also sells raw chocolate, cheesecake, powerballs, raw Kokolato vegan ice cream, kombucha, rice-free nori rolls made with cauliflower, courgette pasta pesto, raw pad thai and Love Bowls with fruit and granola topping.
Mark suggests doing a juice cleanse every two months to give your digestive system a break. You can also replace a meal for a juice once in a while to help keep your health vibrant. Mark says the key is to find your own balance: “Work hard, play hard, cleanse and repeat!”.
