Simple, healthy and always a hit at parties, this appetizer bruschetta looks beautiful on the table.
Choose heirloom tomatoes from your farmers’ market if available or just organic tomatoes from your health food store.
Wash and slice the tomatoes, toss them with fresh basil, corriander, extra virgin olive oil and lemon juice to enhance their natural flavor.
Choose a bread that suits your taste and dietary need (in this recipe we use a gluten-free toast).
Top with the tossed tomatoes on each bread slice, drizzle a teaspoon of organic Greek yogurt, place a couple of small parmesan cheese slices, add salt and pepper and serve.
It doesn’t get simpler or more delicious than that!
