In a food processor, blend the dates and the agave syrup (or honey) and slowly add all other ingredients, with the cherries being last. Pour the beautifully blended mix into large mixing bowl.
With wet hands, mix the dough until you reach a clustered texture.
On a baking sheet, form a large and thick rectangle using the entire mixture (about 1/4 inch)
Refrigerate for 30-40 minutes.
Remove the mixture from the fridge, and cut into desirable sized bars ”“ make a big one just for you for all your cooking effort. Scoop the raw chocolate over each cut bar and spread chocolate to cover the top of each.
Refrigerate so the chocolate sets – keep bars in refrigerator until gone, which wont be long!
