Use your imagination to make fun shapes and forms with raw vegetables. We have used yellow and red bell pepper cut in the shape of a rooster. Fennel or celery sticks make fun legs, and black sesame seeds are great as eyes. For feathers and wings, use what vegetables you have and like. This time we have used carrot sticks, cucumber slices and leafy greens.
Drain the cashew nuts (discard the soaking water). Add all ingredients for the dip to your blender and blend on high speed until creamy. Add more water if necessary to blend. Add salt and pepper to taste. Pour into 4 individual serving bowls and arrange the veggies around the dip.
