the modern ayurvedic cookbook

By: amrita sondhi

This comprehensive and user-friendly vegetarian cookbook is based on the Ayurvedic tradition of eating according to your dosha. Your dosha, or physical constitution, is determined by identifying physical and mental characteristics: air, fire and earth. If you’re not sure of your dosha, just take the questionnaire provided at the beginning of the book to help get you started.

While the recipes are authentically Ayurvedic, Sondhi takes great care to utilize easy-to-find ingredients and modern-day cooking methods perfect for the busy 21st century lifestyle, while ensuring tantalizing and nutritious cuisine. Recipes are broken down into breakfast, appetizers and snacks, salads, soups, entrees, breads and grains, desserts, condiments and beverages. Next to the name of each recipe are the symbols for each of the three doshas and an indication as to whether the particular recipe will increase and possibly aggravate that dosha, have a neutral effect, balance or decrease the qualities of that dosha. Many recipes also include ingredient alterations based on your dosha.

To round out the book, Sondhi includes a food guidelines chart, menu plans, meat substitutions for the non-vegetarian, information on yoga postures, cleansing programs, aromatherapy and color therapy.
