INGREDIENTS

Use your imagination to make fun shapes and forms with raw vegetables. We have used yellow and red bell pepper cut in the shape of a rooster. Fennel or celery sticks make fun legs, and black sesame seeds are great as eyes. For feathers and wings, use what vegetables you have and like. This time we have used carrot sticks, cucumber slices and leafy greens.

Cashew Dip

Drain the cashew nuts (discard the soaking water). Add all ingredients for the dip to your blender and blend on high speed until creamy. Add more water if necessary to blend. Add salt and pepper to taste. Pour into 4 individual serving bowls and arrange the veggies around the dip.



Notes & tips: Let your child join in the fun of cutting vegetables with a non sharp dining knife. Miso is a fermented soy bean paste. Find it in the Asian section of your supermarket.

Veggies:

  • 1/2 yellow bell pepper
  • 1/4 red bell pepper
  • 1 carrot
  • 1/4 cucumber
  • 1 handful spinach or other leafy greens
  • fennel or celery sticks (to use as legs)
  • black sesame seeds (to use as eyes)
 

Cashew Dip:

  • 2 cups cashew nuts, soaked 30 minutes in filtered water
  • 1 lime, juiced
  • 1 tablespoon olive oil
  • 1 tablespoon miso paste
  • 1/2 yellow bell pepper (more or less, use the leftovers from your veggie creations)
  • 1/2 cup filtered water (not the soak water)
  • 2 teaspoons turmeric powder for a yellow color (optional)
  • salt & pepper to taste
